<p>For a fun family night make hamburgers and it is a treat for the whole family! Make them as spicy as you like.</p>
<p><strong>INGREDIENTS:</strong></p>
<p>Enough ground beef for 4 medium sized hamburgers.</p>
<p>1/4 onion chopped up very small.</p>
<p>2-3 tbs (depending on how spicy you like your food)<a href="http://www.glutenfreehelp.info/tina-turbin/food-review-cajun-choice/"> Cajun Choice</a> blackening spice.</p>
<p>&nbsp;</p>
<p><strong>DIRECTIONS:</strong></p>
<p>Put all meat into a mixing bowl (make sure your meat isn&#8217;t frozen at all!)</p>
<p>Add onion and mix well.</p>
<p>Add all of the <a href="http://www.glutenfreehelp.info/tina-turbin/food-review-cajun-choice/">Cajun choice</a> blacking seasoning and mix well.</p>
<p>Divide the meat evenly and make 4 round burgers. Make sure burgers aren&#8217;t too thick or else you will have a hard time cooking them. When you cook burgers they get thicker naturally so you can make them pretty thin.</p>
<p>Heat in a pan over medium heat about 1tbs olive oil.</p>
<p>Once oil is warm add all hamburgers.</p>
<p>Cook for 2 min on medium heat on 1st side.</p>
<p>Flip all burgers onto the other side and cook on medium heat for another 2 min.</p>
<p>After this turn your heat down to low and let the burgers cook through.</p>
<p>Cooking the burgers on high on both sides will trap in the flavor and make your burgers juicier.</p>
<p>If you are really into spicy food like me you can sprinkle some more of the blackening spice on top of the burger after you flip it onto its second side.</p>
<p>Depending on how thick your burger is and how you like your meat (medium, medium rare, etc) the time will vary.</p>
<p>If  you are new to cooking and aren&#8217;t sure take one of the burgers off onto a plate or cutting board and cut into it from the center to one of the sides. this way you can check to see how pink it is in the inside.</p>
<p>Make sure all your burgers are the same thickness so they cook evenly.</p>

<p>I made shapes of hearts and ovals but really any shape can be made.  These gluten-free, soy-free chocolate “designs” can be used on tops of <a href="http://www.glutenfreehelp.info/recipes/desserts/strawberry-muffins-or-bundt-cake/">cupcakes</a>, <a href="http://www.glutenfreehelp.info/recipes/desserts/flourless-chocolate-cake/">cakes</a>, served with a cup of cappuccino or with a small bowl of fruit for a classy dessert.</p>
<p>Make sure you make the piping thick enough.</p>
<p>&nbsp;</p>
<p><strong>INGREDIENTS and SUPPLIES</strong></p>
<p>&nbsp;</p>
<p>1. ½ package (5 oz.) of <a href="http://www.glutenfreehelp.info/tina-turbin/food-and-company-review-enjoy-life-foods/">Enjoy Life </a>Semi-sweet Chocolate Chips</p>
<p>2. Parchment triangles</p>
<p><strong>DIRECTIONS</strong></p>
<ol>
<li>Place chocolate in pan on low heat and stir with a wooden spoon constantly or place in a Pyrex cup in microwave for 30 seconds at a time and stir at each break.</li>
<li>Take a piece of waxed or parchment paper and tape it to your cookie sheet (or counter top like I did) – draw the shapes you desire.</li>
<li>Roll your triangles into cone shapes.</li>
<li>Once melted you’re ready to fill your parchment paper triangles but make sure the tip is very small, allowing a little chocolate out.  Roll over the top of the parchment and gently squeeze.</li>
<li>Place in refrigerator or freezer.  Peel off gently.  Enjoy.</li>

<p><strong>INGREDIENTS</strong></p>
<p>1 cup creamy nut butter (peanut, almond, etc.)</p>
<p>½ cup room-temperature honey (or ½ cup honey and ½ cup maple syrup)</p>
<p><a href="http://www.glutenfreehelp.info/gluten-free-info/">Gluten-free rice crisps</a> (¾ cup to 1 cup)</p>
<p>1 tsp vanilla</p>

<p><strong>DIRECTIONS</strong></p>
<p>1. Mix all in a bowl, and if it’s not sticky enough, roll with your hands into a ball, then add more nut butter. You can add more honey, but it will be sweeter.</p>
<p>2. Roll into 1-inch balls and place on a cookie sheet.</p>
<p>3. Place in the freezer for 30 minutes.</p>
<p>4. Remove and store in Ziploc bag. They can be kept either in the fridge or in the pantry, where they will stay softer.</p>

<p>I have been using this spice on almost everything: salads, chicken, cole slaw, eggs and veggies. My favorite combo thus far has been swiss chard and mushrooms, liberally seasoned with this tasty spice:</p>

<p>1 bunch of swiss chard, torn into shreds</p>

<p>1 clove garlic, chopped</p>

<p><strong>DIRECTIONS </strong></p>
<ol>
<li>Melt the butter in a skillet over medium heat.  Add the garlic and toss until a bit brown – about 2 minutes.</li>
<li>Add the mushrooms and stir fry for about 5 minutes on medium heat.</li>
<li>Add the chard and stir fry again until tossed with butter and mushrooms. About another 5 minutes or so.</li>
<li>Sprinkle liberally with <a href="http://www.glutenfreehelp.info/tina-turbin/food-review-cajun-choice/">Cajun’s Choice</a> and enjoy!</li>
<li>You could even add some <a href="http://www.glutenfreehelp.info/recipes/main-dishes/gluten-free-bacon-roasted-chicken/">protein</a> to this dish if you wish.</li>

<p><strong>INGREDIENTS</strong></p>
<p>&nbsp;</p>
<p>1 c coconut milk (not light)</p>
<p>2 tsp ground cinnamon</p>
<p>1/3 to 1/4 c agave nectar</p>
<p>1 tsp orange zest</p>
<p>¼ c unsweetened cocoa powder</p>
<p>1/8 tsp fine sea salt</p>
<p>pinch of cayenne</p>
<p>1 12.3-oz. box of silken firm tofu, drained</p>
<p>raw cacao nibs, for garnish or even a <a href="http://www.glutenfreehelp.info/recipes/desserts/food-and-company-review-gotta-eat-sweets/">truffipop or truffibite</a> if you really want to have some fun.</p>
<p>&nbsp;</p>
<p><strong>DIRECTIONS</strong></p>
<p>&nbsp;</p>
<p>1. In small saucepan over high heat, combine coconut milk and cinnamon. Bring to a boil. Reduce heat to medium-high and boil for 7 minutes, whisking often. Mixture will reduce to about 1/3 cup. Remove from heat and strain through a fine-mesh sieve into a small bowl.</p>
<p>&nbsp;</p>
<p>2. In a medium saucepan, place 3 tbsp of the cinnamon-coconut milk. (You can save the rest for another use—it’s great in smoothies!) Add agave, orange extract, cocoa powder, salt, and cayenne. Whisk together. Bring to a boil, then reduce heat to low and simmer for 1 minute, whisking constantly. Remove from heat.</p>
<p>&nbsp;</p>
<p>3. Pour mixture into blender. Add tofu and blend until smooth, transfer to a medium bowl. Cover and refrigerate until set, at least 2 hours before serving. Use cacao nibs for garnish. Serve chilled.</p>

<p>I was a bit skeptical testing “already-cooked” rice in a bowl. It appealed to me somewhat, as it was organic and preservative-free, and sometimes I do need a side dish and don’t want to wait for the standard forty minutes for my brown rice. So I gave Go-Go Rice a shot and asked my test team in L.A. to try it out as well.</p>
<p>I popped this little dish in the microwave, after peeling back the cover slightly, set the time, walked away, got myself a glass of juice, and it was done. The moment came to test it. I could not believe how moist and tasty these little hearty grains of brown rice were. I thought it would be dried-out and need something to make it taste good. Not at all. It tasted as if I had just cooked it stove-top, with the same consistency as stove-top rice.<a href="http://www.glutenfreehelp.info/wp-content/uploads/2010/10/GoGo-Rice-organic-brown-Rice-Bowl-300x300.jpg"><img class="aligncenter size-full wp-image-4073" title="GoGo-Rice-organic-brown-Rice-Bowl-300x300" src="http://www.glutenfreehelp.info/wp-content/uploads/2010/10/GoGo-Rice-organic-brown-Rice-Bowl-300x300.jpg" alt="" width="300" height="300" /></a>I called the L.A. team and before I could say a thing, they went on and on about how convenient, fast, and unexpectedly delicious the organic brown rice was.</p>
<p>The master of the creation, T.J. Song, Stanford Business School graduate, with seventeen years of global trading (in Korea and the U.S.) and ten-plus years in the natural and organic food business in the U.S. under his belt, was a rice lover. In fact, it was and still is his daily staple. He wanted convenient “rice meals’’ for a long time. He found consumers purchasing products like this, but to him, these meals weren’t that good.</p>
<p>In 2004, he finally decided there was a potential business and ventured into the cooked rice business with a facility completed in 2005. Go-Go Rice was successfully introduced March 2006 to Expo West. Minsley, Inc. currently manufactures and distributes these delicious, convenient rice bowls.</p>

<p>Try this really yummy shrimp recipe using <a href="http://www.glutenfreehelp.info/tina-turbin/food-review-cajun-choice/">Cajun Choice</a> seasoning. It is so good for dinner, for appetizers or just on a salad for a light lunch! Try also with yummy veggies.</p>
<p><strong>Ingredients:</strong><strong> </strong></p>
<p>1 Cajun shrimp seasoning packet</p>
<p>Approximately 24 precooked medium sized shrimp</p>
<p>1/3-1/2 butter stick</p>
<p>1/3-1/2 lemon juiced</p>
<p>&nbsp;</p>
<p><strong>Directions:</strong></p>
<p>Put all shrimp in a pan on a low-medium heat (if your shrimp are frozen be sure to run room temperature water over them before you cook them to be sure they are defrosted)</p>
<p>Add whole packet of <a href="http://www.glutenfreehelp.info/tina-turbin/food-review-cajun-choice/">Cajun Choice</a> Shrimp seasoning evenly on top of the shrimp.</p>
<p>Cut butter into small pieces and add directly into pan.</p>
<p>Once butter is all melted stir shrimp, seasoning and butter all together.</p>
<p>Add lemon to mixture.</p>
<p>Stir some more to make sure lemon is all over shrimp.</p>
<p>Cook for about 2 more min and serve.</p>
<p>&nbsp;</p>
<p>Serves 2 as a main course or 4 as an appetizer.</p>

This applies to cookies, pancakes, and muffins.</p>
<p style="text-align: left;">Does your recipe require cake flour? You can make your own by combining 1 ¼ cups of your gluten-free flour blend with ¼ cup of tapioca starch or flour or ¼ cup of corn starch.</p>
<p style="text-align: left;">The one-for-one substitution doesn’t apply to all recipes, though, such as with Danish sweet rolls and yeast breads.</p>
