KA-ME Review


KA-ME literally translated means “turtle” or “tortoise” in Japanese, implying permanence and traditions to the approach in manufacturing Asian food. KA-ME is over 25 years old in the business of adhering to dietary philosophies and cooking and baking methods of the Asians, brought down through traditions.

Gluten is not a staple in the Asian world or in their foods and never has been. Even the inclusion of soy and wheat is “an American idea.” How absurd!

KA-ME has delicious gluten-free, single-serve rice crackers as well as lightly-salted ones which I really enjoyed and would purchase again.

The company manufactures more products and many in Asia, yet these are the only two I tested and can comment upon.

Mary’s Gone Crackers


I tested all 5 flavors of gluten-free Mary’s Gone Crackers as well as three flavors of their Sticks & Twigs, somewhat a replacement for your slender pretzels, but with a much more grainy, crunchy, and hearty flavor. I was not all that fond of them and found them to be quite dry and as a result ran a taste test with my L.A. team and a “party” in Florida with over 15 people. The unanimous decision was that they were a bit dry and flavorless.

The round crackers are beautifully displayed and a terrific idea, made with organic brown rice, quinoa, and flax. Again, they were a bit dry, and we found them to be best eaten with a moist topping or spread. The Caraway was the most true to its name in its taste and has the most flavor.

Mary Waldner, founder of Mary’s Gone Crackers, suffered from intestinal pain for years until discovering her pain was the result of gluten, and her son was soon after diagnosed with celiac disease. Mary’s Gone Crackers has been her solution to satisfy the needs of people and her family with a good, nutritious fiber-packed food.

Gluten-Free Dining Out Made Easier

Do you manage or own a restaurant and need help adopting a gluten-free menu or GF options? Are you celiac or gluten-intolerant and looking for local GF eateries or restaurants along the way on your next road trip?

The Gluten Intolerant Group of North America (GIGNA) has created the groundbreaking and convenient Gluten-Free Restaurant Awareness Program (GFRAP).

How does it work? Over 1600 independent and chain restaurants participate in the program, each one receiving “extensive” publicity and resources for creating GF menus and GF menu options.  Gluten-free diners benefit, too! Just go to glutenfreerestaurants.org, click on “Find a Restaurant,” type in your zip code, and voilà! They can also find out special information about the restaurants they choose and even give feedback after their dining experience is over.

To sign up, owners and managers can fill out an online application available at GFRAP’s website, glutenfreerestaurants.org. For more information or a quote, call 253-218-2957 or e-mail GFRAP@gluten.net for more information. Prices start at $100 with the Basic Level certification—the first of three levels of accreditation.

With 8 to 10% of the U.S. population currently on a gluten-free diet, and 96% of them brand-loyal, gluten-free restaurants are sure to attract increased patronage. What’s more, we have GF and non-GF friends, too!

Nuts Online is your source for just about any nut and nut flour we could ask for. I made wonderful cashew flour chocolate chip cookies one evening, and the next evening I made macadamia nut flour bread as a substitute for my almond flour bread.

This company has been around since 1929 and has remained in this family since its inception and will have many years in business to come. They offer raw nuts but also roast their own, select premium quality, and take care of their customers. Any questions, comments, or suggestions are always welcome, according to the family of owners.

As a third generation business, they are familiar with the topic and subject of celiac disease and will guarantee absolute satisfaction. They became educated on the topic and then decided to analyze their ingredient list and got facility certification ensuring no cross-contamination. Chocolate Tofu Filling

You are going to love this delicious dessert! It’s a simple, fast, and rewarding dessert to present to the table. It really brings the smiles. Kids love it and so does my chocolate-lover husband.

(1 filling for a pie or 8 little ramekins)

INGREDIENTS

16 oz (2 packs) firm silken tofu

½ c cocoa dark powder (not sugar)

1/3 c maple syrup

2 tbsp sugar

1 tbsp vanilla

DIRECTIONS

1. Mix with your Bullet, Vita-Mix or blender.

2. Pour in a pre-baked pie shell or in 8-10 small ramekins.

3. Refrigerate.

Optional:  3  Wilmar Truffles (grate them and sprinkle on top) or gluten-free marshmallows

Sunshine Burger is one of the only companies that offers a gluten-free, soy-free, vegan and USDA certified organic veggie burger. Gravy Lovers: Boston Market’s Poultry Gravy is GF!

The next time you’re at Boston Market, you can enjoy some gluten-free gravy on those heavenly mashed potatoes! It turns out that Boston Market’s poultry gravy has no gluten!  (Note: The beef gravy is NOT gluten-free.) I took a look at the ingredients and even called Boston Market to confirm that it was true. Of course, cross-contamination is always a risk when you’re eating out.

Katz Gluten-Free – Review

I am SO proud and please to have been able to share all the honest feed-back on Katz Gluten-Free Bread good which I was able to share with my Florida and Los Angeles testers this past month. We really had a ball testing these breads out in every scenario imaginable.

I was sent Hamburger Buns, Sandwich Rolls, Large Challa Rolls and Dinner Rolls( small challa) to test amongst some hungry celiacs, non celiacs and two wonderful families with dietary needs to suit autism.

We kicked off testing the hamburger buns with a wild BBQ in Florida and no one attending knew what they were in store for. They had no idea that the buns sitting next to the BBQ was sure enough, our Katz Gluten-Free hamburger buns, which we had pre-sliced to be able to pop a delicious Buffalo Burger or a for my Vegan friends, a pile of grilled vegetables.

We lightly toasted them some of them and left the others untoasted. They toasted beautifully and they tasted delightful, light and fluffy like the “old days” of real buns. They held together like a “traditional” bun and not one person had a clue they were not a gluten loaded bun. Pretty impressive.

The sandwich rolls taste good but overall they have a texture like a firm sourdough bun yet no sourdough flavor. Due to the texture and look many of us were expecting that sourdough punch when biting into it. Nevertheless, we enjoyed the rolls with sandwiches and had an overall agreement they were best with a meat type sandwich, or we can say a heavier protein over an egg salad or tuna salad for example as they bread is so firm the “salads” ooze out too much. The meats such as pastrami, corned beef etc paired perfectly with the rolls. So much a number of us went for seconds.

The large challa rolls and dinner rolls (small challa rools) really taste the same. They are so incredibly delicious, eggy, precisely light and slightly yet perfectly sweet.

The overall consensus is that Katz taste like home- made. It really was unanimous. Without a doubt they all taste as if they were just out of the oven. Had someone served them warm without us knowing better, we feel they were as good as fresh baked.

I really am impressed with the outstanding flavor and texture that Katz Gluten-Free has pulled off as well as the true-taste they have accomplished in their kitchens. These products are stellar!
