Converting Your Favorite Recipes to Gluten-Free

Now that you’re gluten-free, you don’t have to say goodbye to your favorite recipes. If you have tons of family recipes that have been handed down to you, this can be very good news!

The conversion process is simple: just use gluten-free flour blend (which you can make yourself using my gluten-free flour blend recipe—or buy it prepackaged) one-for-one. This applies to cookies, pancakes, and muffins.

Does your recipe require cake flour? You can make your own by combining 1 ¼ cups of your gluten-free flour blend with ¼ cup of tapioca starch or flour or ¼ cup of corn starch.

The one-for-one substitution doesn’t apply to all recipes, though, such as with Danish sweet rolls and yeast breads.

Bacon Candy

I like bacon, and I like candy, so I gave this recipe a try, and boy, was it delicious! Kids will love this gluten-free treat, for sure.

INGREDIENTS

1 lb. bacon

Brown sugar

DIRECTIONS

1. Preheat oven to 350 degrees.

2. Slice bacon into 1-in.strips and coat with brown sugar.

3. Bake at 350 degrees on a broiler pan for approx. 15 mins., turning once.

4. Cool and store in an airtight container.

Gluten-Free Streusel Topping

The gluten-free version of this classic topping is easy and delicious. Top your favorite desserts with it for a new, scrumptious twist!

INGREDIENTS

½ c firmly packed brown sugar

½ c quick-cooking GF oats

1/3 c GF flour mix

6 tbsp butter, melted

DIRECTIONS

1. In a small bowl, combine brown sugar, oats, and flour.

2. Stir in melted butter.

Food Review: Namaste Foods

 

Namaste Foods, L.L.C. prides itself on the concept and purpose of nourishing the body with good food, which in turn nourishes the mind and spirit. I think celiac and gluten-sensitive individuals can agree that this statement is true.

With my testers in Florida and L.A. licking their lips in satisfaction over their Namaste Chocolate Cake Mix outcomes, we had to try another adaptation, the black bottom cupcakes. Our adapted gluten-free black bottom cupcakes are filled with a delicious cream cheese middle, which blends into the entire cupcake through the baking process, making a truly decadent and moist cupcake overflowing on the top. For those of you who enjoy “muffin tops,” you’ll be pleased to know that you get both a whopping top and the cupcake in these desserts. We opted to use honey instead of the sugar called for in the Namaste recipe, and our topping was slightly altered as well. Just perfect!

The Chocolate Cake Mix really tastes exactly like the old gluten-laden chocolate cake mix we’ve all long forgotten and is a perfect mix for any of your cake or cupcake needs. Any frosting just adds to the delight, as you would expect.

We also tested the Taco Pasta, which comes with a premade mix of noodles. We followed the directions precisely yet added chopped tomatoes, chili pepper, and chicken breast as well as cilantro, fresh lemon juice, and a topping of cheddar cheese. It was delicious. It was a good, easy family meal that took less than 15 minutes to prepare.

Namaste offers 18 varieties of pasta and baking mixes, 8 of which are sugar-free and kosher. The owner, Daphne Taylor, has gone the extra step to ensure they are made in a facility that is gluten-, wheat-, potato-, soy-, corn-, dairy-, nut-, peanut- and cashew-free. She also ensures all ingredients are not genetically modified.

Namaste can sit on family tables that serve kids with multiple food allergies. We were pleased to know so many families are supporting Namaste with the results of happy, pain-free, symptom-free children.

Replacing Dry Milk in GF Recipes

 


I often come across people having trouble replacing milk or dry milk in their GF recipes. Here’s a list of some simple solutions I’ve find. Your own opinions and solutions are always welcome, too!

-If you don’t require a lactose-free substitute, you can use powdered baby formula or buttermilk powdered milk.

-If you’re lactose-intolerant, use Vance’s DariFree powder in plain powder, a perfect substitute for regular dry milk. Other lactose-free substitutes include almond meal, Ensure (which is GF), Coffee Mate (which is also GF), dry rice milk powder, dry soy milk powder, a variety of nut flours, and last—but certainly not least—coconut milk (yum!).

-If you’re worried that dry milk may contain gluten, you can set your mind at ease. You can find plenty of brands of gluten-free dry milk, such as NIDO by Nestle or Carnation. You can call up the companies for more information regarding their facilities.

-The road to becoming a great GF cook is one of experimentation. Don’t be afraid to try new things. Try GF bread recipes without any milk or powdered milk at all and see how it comes out. Sample different nut flours as substitutes and see what works best. Trial and error is how some of the best GF recipes were developed!

Gluten-Free Homemade Ravioli – without a machine

This recipe is from Glutenfreeda, so she deserves the credit for this. It worked for me without a bread machine, so I know if you follow these simple steps, you will have success too.

INGREDIENTS

2-1/2 cups GF flour mix
1 teaspoon salt
1 tablespoon olive oil
5 eggs
1 egg yolk

DIRECTIONS

1. Place your GF flour in a food processor.

2. Add the salt, oil and eggs.

3. Pulse processor until mixture resembles dough.

4. Remove from the bowl and place on a just lightly GF floured surface. Be sure not too much flour!

5. Knead your dough, folding over and turning over until the right consistency appears like bread dough. If the dough gets too dry and just add your egg white. It shouldn’t need it. Wrap the dough in plastic wrap and cover.

6. Allow the dough to rest for at least 20 minutes and not less. Be patient.

At this point the recipe calls for actions with the pasta machine which I did not use. I know many people want to make pasta that do not have machines, so I tried this and it worked.

7. I rolled out the dough carefully with my rolling pin and then cut it with the ravioli cutter.

8. I changed the recipe again by placing filling in the middle and resting another square or round on top and sealing the edges. Put a touch of water on the edges and seal and use a fork to push down the edges better.

9. Cook the ravioli just a few at a time in boiling, salted water. Cook for about 2 minutes if the inside is not uncooked meat you are using. If you are using uncooked meat in your filling boil is a 4-5 minutes at a low rolling boil. They will start to float.

10. Drain your ravioli  in a colander  if you do not have a slotted spoon.

Cookies and Crème Sorghum Squares

 

These squares are just delightful and a treat for the whole family! Perfect for a sweet tooth after a savory dinner.

INGREDIENTS:

2 cups Popping Sorghum, popped

1 cup shredded coconut (preferably unsweetened)

1½ cup Faux-reo Cookie Wafers – roughly crushed (recipe below)

1 cup confectioners sugar

4 rounded tablespoons powdered milk

6 oz  plain coconut oil

DIRECTIONS:

Lightly grease a 6” x 9” pan with butter

Mix together all dry ingredients in a bowl

Melt  coconut oil in a saucepan over gentle heat until a clear liquid

Pour melted coconut oil into dry ingredients and thoroughly mix together

Evenly spread mixture into pan and press down very firmly with the back of a large spoon

Place pan into fridge and leave until set firm. When set, cut into small squares and serve.

TIP: Store in fridge to retain firm texture. Squares will crumble and fall apart in temperatures above 70F   as the coconut oil starts to melt. Place back into fridge to re-harden.

Faux-reo Cookie Wafers Recipe

Makes 25 – 30 chocolate cookie wafers

INGREDIENTS:

1 ¼ cups sorghum flour

½ tablespoon corn or potato starch

½ cup unsweetened Dutch process cocoa

1 teaspoon baking soda

¼ teaspoon baking powder

¼ teaspoon salt

1 cup sugar

½ cup PLUS 2 tablespoons (1 ¼ sticks) room-temperature, unsalted butter

1 large egg

DIRECTIONS:

Set 2 racks in the middle of the oven. Preheat to 375F degrees.

In a food processor, or bowl of an electric mixer, thoroughly mix the sorghum flour, corn/potato starch, cocoa, baking soda and baking powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until the dough comes together in a mass.

Take rounded teaspoons of batter and place on a parchment paper lined baking sheet approx 2 inches apart.  With moistened hands, slightly flatten the dough.

Bake for 9 minutes for a softer cookie or 13 minutes for a crunchier cookie, rotating once for even baking. Set baking sheets on a rack to cool.
