Gluten-Free Banana Chocolate Chip Muffins

Banana chocolate chip muffin

I try and offer options for substitutions for those that may are allergic to dairy, eggs or have a sensitivity to sugar.

1 ¾ cups Pamela’s Baking & Pancake Mix
¼ cup melted butter or oil *(or replace with applesauce)
½ cup milk ( *or soy or rice milk)
½ cup sugar ( * or honey)
1 egg ( * see substitution list below)
1 teaspoon vanilla
1 cup very ripe mashed bananas
¼ cup chopped walnuts, optional
1 cup REFRIGERATED gluten-free chocolate chips

Yield: approximately 7 muffins

1. Mix all ingredients together.
2. Fold in the COLD choc. chips and walnuts last.
3. Spoon 2/3 full into greased muffin pan (or use paper muffin cups).
4. Bake in preheated 350 degree oven for approximately 20-25 minutes.

    I have a bakeing question for you….
    How do you get the muffins to (basically) explode above the muffin cups? All of the muffins I have ever baked (GF or otherwise) just kinda go flat once they bake…making a hockey-puck shape…how do you get “THE muffin-top”??? I’ve tried ALL different kinds of things to figure it out- and can NOT get it!!
    Please help!!!!

    Hi Jaclyn,

    I know exactly what you are referring to! Yes, I have had that happen too.

    We have to remember there is no gluten to make these little guys nice and soft and poofy. Hence the use of the right mixture of flours and xanthum gum or its substitute. The right amount is crucial or you get tough hockey discs.

    Also, keep in mind your baking soda and/or baking powder always help when applicable.

    Also, the above recipe is with Pamela’s Products and if you read the ingredients on the package I refer to, well she is a Master at ensuring she gets all the right ingredients in the right proportions.

    OK, now you have me curious. Please tell me more about Southland Mills and you! I see you are a co-owner.

    Hi, If you don’t have a “mix” what flours, etc. do you suggest? on hand i have garbanzo bean flour & white rice flour.
