The more garlic, the better! you can put this on any dish including gluten-free bacon roasted chicken.
INGREDIENTS
Handful of pine nuts
3 cloves of garlic, depending on taste
Salt & freshly ground black pepper
3 handfuls of fresh basil, chopped
Olive oil
Drop or two of lemon juice to taste
DIRECTIONS
1. Brown half of the pine nuts on a dry pan
2. Stick all the ingredients in a blender and blitz it up. If you prefer a more rustic pesto, grind the garlic with the basil leaves and salt in a pestle and mortar, remove, then mash in the pine nuts. Mix with olive oil.
3. Adjust the flavor of your dairy-free pesto by adding a drop or two at a time of lemon juice.
Voila! Gluten-free, dairy-free pesto for spreading on sarnies, stirring into pasta, or even rubbing on yourself, if that’s what strikes your fancy!

Mmmm I LOVE pesto! I love to spread it on fresh-baked bread, roasted vegetables, and on meatloaf for a tangy Italian flair. I can’t wait to try this recipe:)
Yummy yummy! I made this tonight, but I added more garlic and lemon. I’m a huge garlic freak, though, so 3 gloves is probably enough for most people. 3 thumbs up!
I made this myself following the directions exactly and it was REALLY good! I made it with some GF angel hair pasta. I look forward to using it with other dishes.
