(Gluten-Free) Chocolate-Covered Fruit

This became a favorite appetizer of mine after a Christmas party I served this at several years ago.  They’re always a hit, and a decadent way to meet your daily requirement of fruit!

INGREDIENTS

1 pound fresh strawberries washed
8 ounces dried Turkish apricots
8 ounced medjool dates
8 ounces E. Guittard 72% Cacao Bittersweet Chocolate, chopped
8 ounces E. Guittard 38% Cacao Milk Chocolate, chopped
2 Tablespoons shortening

DIRECTIONS

1. In a double boiler, gently melt the chocolate and shortening over simmering, not boiling water. Be sure to stir well to fully incorporate the shortening.

2. Keep the chocolate at a low heat and gently dip the fruit in the mixture.

3. Place each piece on a piece of wax paper and transfer to the fridge for 30-60 minutes to set. You may have to re-warm the chocolate a few times as it starts to set.

Note: Taking a cue from my experiment with fondue, I mixed two types of chocolate, but if you only have one it will work just fine. Also, I don’t have a double boiler so I set up a large pyrex bowl over a saucepot with simmering water.

If you want to get more creative, try chopping up nuts or melting white chocolate for an extra bit of color and flavor. Substitute cherries, apples or other dried fruit. Though really, what more do you need than chocolate and strawberries?

Gluten-Free “OH MY!” Browny Muffins

Browny muffins

These are to die for! They are a wonderful result of trial and error but this one does it!

Makes approx. 30 brownies

INGREDIENTS

2 ¼ cups gluten free baking mix for brownies
1 cup maple sugar
1 tablespoon plus ½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon xanthan gum
1 teaspoon salt
1 cup coconut oil
1 cup applesauce or apple/raspberry sauce
¼ cup vanilla
1 cup warm water
2 cups gluten-free chocolate chips, optional but yummy

DIRECTIONS:

1. Preheat oven to 325 degrees.

2. Oil your muffin trays.

3. Whisk together gluten-free flour, sugar, baking powder, baking soda, xanthan gum and salt.

4. Now add coconut oil, applesauce, vanilla and warm water, stirring until the batter is smooth.

5. Fold in chocolate chips (optional).

6. Fill muffin cups ¾ full.

7. Bake for 4 minutes, rotate, and continue baking.

8. Bake approximately 10-12 minutes.

9. Remove from oven when brownies are firm on the edges but soft to the touch in the center, about 5 additional minutes.

10. Test for doneness, don’t over-bake.

Gluten-Free Chicken Breasts with Cherry-Chocolate Sauce

Chicken dish - dried cherries

INGREDIENTS

¼ cup plus 2 tablespoons salt
4 cups water
4 boneless, skinless chicken breast halves
¼ cup rice flour
1 ½ tablespoons coconut oil
1 ½ tablespoons olive or vegetable oil
2 cups low-sodium chicken broth
1/3 cup dried cherries
1/3 cup balsamic vinegar
2 tablespoons brandy (optional but good)
1 ounce unsweetened chocolate, chopped

DIRECTIONS

1. Dissolve salt and water in a large bowl or zip-top bag. Add chicken and soak for 30 minutes in refrigerator. Remove chicken, rinse with water and pat dry.

2. Preheat oven to 200 degrees. Pour flour onto a plate and dredge each breast, patting to lightly coat.

3. Melt the oils over medium heat in a heavy 12-inch skillet. Heat up oil. Lay chicken in pan and cook, undisturbed, until brown, about 5 minutes. Turn and cook on second side, undisturbed, until juices begin to clot around pieces, 5-7 minutes. Remove chicken and keep warm in oven.

4. Add broth to skillet, scraping to release brown bits. Boil until reduced to 1 cup, 8-10 minutes.

5. Add cherries and vinegar; boil until thickened, 8-10 minutes.

6. Stir in (brandy) and chocolate until melted. Spoon over chicken and serve.

OH my gosh, YUMMY!
