Gluten-Free Pumpkin Almond Brownies

This gluten-free recipe was shared by a friend who loves to eat gluten-free, but sometimes her family can be a little more than skeptical.  Here is a recipe that has proven to surprise even her dad!

INGREDIENTS:

1 cup almond butter (chunky, raw)
1 ¼ cup pumpkin puree
2 eggs plus one yolk
1/3 cup of date syrup
1 teaspoon baking soda
1 Tablespoon cinnamon (use 1 teaspoon if you wish)
1 cup carob chips (substitute: semi-sweet chocolate chips)

DIRECTIONS:

  1. Mix almond butter and pumpkin together until smooth.
  2. Add the rest of the ingredients into the bowl and mix.
  3. Pour into a GREASED (coconut oil) 8×8 brownie pan (I used 9×9 and even that made the brownies thick enough, read: hard to cook all the way through).
  4. Bake at 350 degrees for 25-30 minutes. The middle should be set, so just check it with a toothpick. I had to keep mine in for almost 45 minutes until the middle was cooked.
  5. Cool all the way down or even refrigerate…I stuck mine in the freezer…Yum!

No-Pudge Brownies in A Cup – 2 Points (Weight Watchers)

I don’t know if any of you ever had (in your non-GF days) “NO PUDGE” brownies, but they are these lowfat brownies that are obviously not GF.

Well my husband loves this “NO PUDGE”-inspired, gluten-free mix I created! You can take just tablespoons of the mix and one tablespoon of fat free yogurt, stir it together and microwave it for a minute and viola, you can always have a hot brownie!!

You can either make up the whole batch or make individual servings in coffee cups or ramekins.

INGREDIENTS

1/2 cup unsweetened cocoa
3/4 cup all-purpose Gluten-Free flour mix*
1 Tbs. Corn Starch
1/4 tsp. baking soda**
1/4 tsp salt
1 ¼ cups sugar
2/3 cup fat-free vanilla yogurt***

Note: You may add nuts if you wish (will increase the Weight Watchers points).

*I used Pamela’s all purpose mix once and I used Ener-G rice mix once.
** If using an all purpose GF mix with baking soda in it, don’t add the ¼ tsp baking soda.
*** Only add 2/3 cup yogurt if you are making the entire pan at once.

DIRECTIONS FOR ENTIRE PAN:

  1. Pre-heat oven to 350 degrees.
  2. Mix all ingredients together.
  3. Spray an 8″ x 8″ pan with cooking spray.
  4. Bake for 30-35 minutes at 350º.

INDIVIDUAL BROWNIE:

  1. Mix all of the above dry ingredients.
  2. Take 2 Tbs. of the dry mix and mix with 1 Tbs. of yogurt.
  3. Place in a coffee cup or anything microwaveable.
  4. Microwave on HIGH for a minute.

Weight Watchers: The individual brownie serving is an estimated 2 Weight Watchers points.

Company & Product Review: Sweet Christine’s

www.sweetchristinesglutenfree.com

Safe to eat, healthy, gluten-free, and top-of-the-line yummy—that is how we are summing up Sweet Christine’s.
Oh my, folks, brownies that are the best ever, better than the best wheat brownies I’ve had in the past—no kidding!—donuts that taste like donuts should, and a truly decadent chocolate lava cake that oozed with chocolate as we fought over the last piece.

Sweet Christine’s is much more than delicious sweets. They whip up some incredible buns and breads that are just as good left alone as they are toasted.

Christine Ruggio has her dedicated GF bakery in Kennett Square, Pennsylvania, about 20 minutes outside Philadelphia. (We all wish you were here, Christine!) After years of troubles, pain, and misdiagnosing, she finally found the source of her troubles—she was celiac. This diagnosis came in 2005.

Just three years later she was destined to have a bakery; her days in the kitchen had become profitable due to the success of her baked creations. Who would have known that such a diagnosis could turn a busy wife and mother of three into such a wonderful entrepreneur?

Christine is proud to share that her products are all-natural, gluten-free, wheat-free, organic, fresh-baked, preservative-free, and always delicious.

You can easily order online at www.sweetchristinesglutenfree.com, or if you’re in her area, you can stop by her comfortable bakery for a light meal, beverage, or a delicious baked goodie.

When it comes to sweet confections, Sweet Christine’s is one of the best gluten-free companies we’ve tested in the past two years.

We wish Christine and her team nothing but success.
