(Gluten-Free) Chocolate-Covered Fruit

This became a favorite appetizer of mine after a Christmas party I served this at several years ago.  They’re always a hit, and a decadent way to meet your daily requirement of fruit!

INGREDIENTS

1 pound fresh strawberries washed
8 ounces dried Turkish apricots
8 ounced medjool dates
8 ounces E. Guittard 72% Cacao Bittersweet Chocolate, chopped
8 ounces E. Guittard 38% Cacao Milk Chocolate, chopped
2 Tablespoons shortening

DIRECTIONS

1. In a double boiler, gently melt the chocolate and shortening over simmering, not boiling water. Be sure to stir well to fully incorporate the shortening.

2. Keep the chocolate at a low heat and gently dip the fruit in the mixture.

3. Place each piece on a piece of wax paper and transfer to the fridge for 30-60 minutes to set. You may have to re-warm the chocolate a few times as it starts to set.

Note: Taking a cue from my experiment with fondue, I mixed two types of chocolate, but if you only have one it will work just fine. Also, I don’t have a double boiler so I set up a large pyrex bowl over a saucepot with simmering water.

If you want to get more creative, try chopping up nuts or melting white chocolate for an extra bit of color and flavor. Substitute cherries, apples or other dried fruit. Though really, what more do you need than chocolate and strawberries?

Food and Company Review: Enjoy Life Foods

 

Enjoy Life Foods® is not a company unknown to most gluten-free consumers, but there were things about the company that I didn’t know.

Enjoy Life Foods® (ELF) was founded in early 2001 with a purpose to support a product line free of gluten as well as the 8 most common allergens: wheat, dairy, peanuts, tree nuts, egg, soy, fish, and shellfish.

With a purpose as star high as that, it took a bit of work to be able to deliver products palatable and delicious. I for one know what it’s like to try and bake without even half of the most common allergens—difficult!

I personally taste-tested their soft-baked cookies, granolas, snack bars, chocolate chips, trail mixes, chocolate bars, and bagels.

I’ve been using the chocolate chips for years and these are the most common chips I choose to use in my recipes and those listed on my website (http://glutenfreehelp.info). I never have physical troubles nor do my “allergic” friends with these chips.

The granolas were fantastic and bursting with flavor. We also tested them as the base for our homemade trail mix and in granola cookies.  The soft-baked cookies were moist, and we all agreed they were light in flavor, offered in a number of flavors.

Most people do not know about the man behind all this, Scott Mandell. As part of a class assignment at the Northwestern University Kellogg School of Management, he came up with the notion that those with dietary restrictions sacrifice flavor and nutrition in foods. Scott and his team came up with a business plan with good nutrition and great taste for people on a restricted diet. In 2001, he raised money to build a dedicated GF facility to start his company and develop products. Enjoy Life Foods® has been named to Inc. Magazine’s 500/5000 List of Fastest Growing Private Companies for three years in a row from 2007 through 2009.

Popular Old Time Gluten-Free Chocolate and Candy Companies

There are a variety of candies that are tempting and appealing at the stores and especially strategically placed at the check-out stand. Just because you or someone you know can not eat gluten is no reason to toss out your sweet tooth. By all means keep reading.

I am in favor of a low glycemic diet, especially for the celiac but there are times that we may want a little goody. I personally attack the GF cookies I always have on stock but the following information is good to have on hand.

Here is some information about a few favorites:

  • Skittles and Starburst: As of Sept ’09 they put “Gluten Free” in small print under the ingredients list if its gluten free. I guess sometimes the fine print isn’t so bad after all.

 

  • Smarties (One of my husband’s favorites): They stated in Sept ’09 in the “Allergies” section of their website, that ”Smarties and our entire line of products are gluten free. If the UPC number on the packaging begins with ’0 11206′, you can be assured that it is manufactured in a facility that is gluten free and safe to eat if you have Celiac Disease.”

 

  • Reed’s (ginger candy): As of July ’08 all their products were gluten free.

 

  • Pop Rocks!: As of sept ’09 those fun mouth teasers are gluten free.

 

  • Nestle: They have a whole page listing out all their products that are gluten free. All sorts of things from sprees to raisinets.  Last update was Aug ’09.

 

  • Justborn: Mike and Ike, Hot Tamales, Peeps Marshmallows (which are around all seasons with new fun designs), Peanut Chew, Teenee Beanee Jelly Beans and Just Born Jelly Beans are gluten free as of Aug ’09.

 

  • Hershey’s: Hershey’s makes something that everyone likes and that’s chocolate. And lucky for us a lot of their products don’t have gluten in them! Some of their GF products are: milk chocolate bars, almond chocolate bars, milk chocolate kisses, york peppermint patties (I like these frozen), Jolly Rancher hard candies and lollipops, Hershey’s baking cocoa and Hershey’s unsweetened and semi-sweet baking chocolate. Call them to be sure if there is ANY question.

 

  • Godiva: All of their products including solid chocolate pieces may contain gluten. Any person with a gluten allergy should NOT consume ANY of their products. Shucks!
