Raw Sunflower Spirulina Cookies

Experimenting in the kitchen one day with spirulina, I discovered some amazing cookies that are also good for you. These raw cookies are gluten-free and grain-free.

 

INGREDIENTS:

1 c sunflower seeds, soaked 5-10 hrs

3 tbsp macadamia nut butter

3 ½ tbsp date paste

1 tsp powdered vanilla bean

¼ tsp salt

 

DIRECTIONS:

 1. Place in greased liner in dehydrator and make about 1/6-inch thick.

2. Dehydrate 10 hrs at 105 degrees. Turn over cookies. Dehydrate another 5 hrs or to desired texture.

3. Store in an airtight container in the fridge.

4. Place by heaping tbsp on a greased cookie sheet and flatten slightly so they’re somewhat evenly thick.

5. Bake for 8 mins, turn around in the oven, and bake 1-2 more mins.

6. Let cool only 5 mins then remove.

Raw Cilantro Pesto


 This gluten-free, grain-free recipe comes from Debbie Radstrom. I like it because it really has a kick to it! Pair it with your favorite grain-free pasta.

 

INGREDIENTS:

2 c cilantro, chopped and packed

2/3 c walnuts

2/3 fresh lime juice

1 ½ tsp salt or Shoyu sauce

½ c spinach

1 tbsp garlic

1 tbsp ginger, minced

¼ tsp habanera chili or 2 tbsp jalapeno

¼ c olive oil

 

DIRECTIONS:

Mix ingredients together in a blender. Makes 4 cups.

Tina Sends a THANK YOU to All of You

Dear Friends,

I’m sending this out to say THANK YOU to all of you for your continued support – it’s a tremendous help and been quite an avenue to meet such nice people. I love reading all of your communications too.

A special thanks to many of you for calling and sending in the many questions for the past near two years of radio shows, your suggestions, your invaluable feedback, your questions and for listening in on the various shows. I have been on a 4-month break from the radio shows and interviews I was accepting, enabling me to focus on some exciting projects as a children’s author, a fully grain-free (and of course gluten-free) cook, my work in the celiac arena and of course my studying which is very important to me.

I am being very selective ( or picky as you may say) and will do just a few shows this year, keeping you informed. Some very exciting and very wonderful projects are moving forward. Things have really expanded beautifully.

Wishing you all an amazing 2011 and wishing you all success and accomplishment in your goals.

Gift idea- Give Away A Cookie KIT!

TERRIFIC GIFT IDEA!
Darneed Best Gluten-Free & Grain-Free Cookies in a KIT

Cranberry Cookies in a Jar copy


I love Elana Amsterdam’s theory about cooking as well as her sincere desire to find healthy alternatives to avoiding the highs and lows of blood sugar without giving up the taste. I have taken her choc. chip recipe and made a fun gift out of  it and made ony a minor adjustment to suit my needs.

NO GRAINS IN THESE COOKIES!

I hope you enjoy and please write in or share your pictures of how your gift-jar turned out, before giving it away.

Place in a  mason jar in layers : use pop top or screw top mason jars

2-1/2 cups blanched almond flour

½ tsp. salt

1/2 tsp. baking soda

½  cup dark chocolate OPTIONS: or 1/4 cup chocolate and 1/4 cup chopped nuts OR 1/4 cup dried cranberries and 1/4 cup chocolate OR 1/4 cup dried cranberries and white chocolate chips- just be imaginative, it is fun and easy!

Create a little decorative gift tag that says this:

Directions:

Preheat your oven to 350 degrees

In a bowl mix”½ cup light agave

½ cup grapeseed

1 tsp. vanilla-optional( I leave this out)

Add your wet ingredients to your dry( in the jar)

Mix real well – it will be  moist

Refrig 30 minutes

Drop onto parchment paper as 1 TBL balls

Flatten them down to about 1/3 inch thick

Bake approx 7-10 minutes
