Gluten Free Hazelnut Chocolate Chip Cookies

In the kitchen with my adorable grandson, I was thinking up some new cookie ideas this summer that we could enjoy baking together. Chocolate chips being such a staple dessert, I wanted to put my own twist on a traditional recipe!

Ingredients

Scale

2½ cups hazelnut, ground

½ teaspoon salt

1 teaspoon baking soda

¼ cup gluten-free dairy-free chocolate

¼ cup chopped nuts of your choice

½ cup organic honey

2 tablespoons spectrum shortening

1 teaspoon vanilla extract

Instructions

  1. In one bowl combine dry ingredients.
  2. In a separate bowl combine honey, spectrum, and vanilla extract.
  3. Preheat Oven at 350F degrees
  4. Mix the wet into the dry.
  5. Refrigerate 20 minutes.
  6. Place 1 tablespoon balls onto parchment lined pan and flatten slightly (about 1/3 inch thick).
  7. Bake approximately 7 minutes.
  8. Cool on rack. 
  9. Place in refrigerator 5-10 minutes to harden
  10. Remove, store and enjoy!

Notes

If you do small balls, cooking time will be 6-8 minutes, depending on if you flatten them a bit and how soft you like your cookies. 

If you use a larger spoon, they will need more time, and again it depends on how soft you like your cookies.
