Gluten-Free Macadamia Nut Waffles

Macadamia Nut WafflesIn this particular recipe I use Pamelas Baking and Pancake Mix
…A la Delicious! Pamelas is a wonderful Gluten-Free company.

Ingredients:
1 cup Pamela’s Mix
2 medium- large eggs (or equivalent of liquid egg replacer)
3/4 cup water or rice mill if you prefer
1 tbsp oil of your choice
1/3 cup chopped walnuts

Garnish (optional):
6TBL chopped macadamia nuts
Bananas sliced
Strawberries sliced
Edible flowers

Mix all your ingredients except for the macadamia nuts until there are no lumps. Batter should be pour able yet not runny and not too thick.

Add your 1/3 cup chopped macadamia nuts

Pour 1/4 cup batter onto your pre-heated, lightly oiled pan.

Let slightly bubble and then gently flip just once.

Serve immediately with your garnish, butter if your prefer and 100% pure maple syrup.

Your extra pancakes may be wrapped in plastic and frozen for about 4 weeks.

Yields six 4 inch pancakes.

NOTE: You may add substitute other nuts in the same quantity for your macadamia nuts. For more fiber add 2 TBL flax seed yet cook immediately after adding to your batter and reduce macadamia nuts to ¼ cup.
