GF Pamela’s Muffins


I have to add Pamela’s muffin recipe to my site. We all love Pamela’s products and the company offers support in research to celiac and autistic research. I am very behind this same research. We need to find a cure.

1 ¾ cups Pamela’s Baking & Pancake Mix
¼ cup melted butter or oil
½ cup milk
½ cup sugar
1 egg
1 teaspoon vanilla
¾ to 1 cup chopped fruit: bananas, peaches, berries, etc. (if using raisins or dried fruit, add an additional ¼ cup water)
¼ cup chopped walnuts, optional
1 cup gluten-free chocolate chips, optional

Yield: approximately 6 to 7 muffins

  1. Mix all ingredients together.
  2. Spoon 2/3 full into greased muffin pan (or use paper muffin cups).
  3. Bake in preheated 350 degree oven for approximately 25 minutes.
