Jodi Bager was diagnosed with ulcerative colitis in 2000. Rather than give in to a drug-dependent life, she searched for a way to treat her condition naturally. She had a strong feeling her diet had a significant influence on her debilitative condition.
While searching for solutions she came across the Specific Carbohydrate Diet by Elaine Gottschall. The book opened her eyes to the connection between food and intestinal diseases, yet gave her solutions that were logical and helpful. Jodi found the results that she needed within days, repaired her intestines through adhering to the diet, and was inspired to start her own company: Grain-Free JK Gourmet.

I have personally baked with her “special” finely-ground blanched almond flour. Her flour is guaranteed GF and perfect for pie crusts, pizza, cakes, cookies, etc. Her company has truly unique granolas in five delicious ingredient choices without grains or oats. My taste-testing group agrees with me that their granolas are not like any we’ve ever tasted before—nutty, with a unique texture, crunching in the mouth and bursting with healthy flavor. My favorite was the nuts and raisins only due to my love of the real deal which I can’t eat as I don’t do well with oats, even GF oats.
Jodi went on to share with me the fact that many celiacs don’t do well on the GF diet and that many of those that don’t have found improvement on the Specific Carbohydrate Diet and by eating the foods offered on her site. In fact she says, “I never yet met a celiac who didn’t improve on the SCD.”
Jodi’s more recent products offered are gluten- and grain-free biscotti in 4 flavors. She is quick to say that she offers advice and help to anyone in need and can be contacted through her website at http://www.JKGourmet.com.
Please read about Jodi’s second book and you may be able to your health. Every celiec should read this information.
