Gluten-Free Pizza for Your Celiac Child

     One of the essentials every parent needs to know is how to provide your celiac child with delicious gluten-free pizza.

     There are many ways to enjoy gluten-free pizza. You can buy it pre-made, make it from scratch at home, or order it in a restaurant. You can find recipes for pizza dough and various combinations of toppings in gluten-free cookbooks and gluten-free websites. American restaurants such as Uno Chicago Grill, with 200 locations, serve gluten-free pizza. You can look up restaurants that accommodate gluten-free patrons with gluten-free pizza online through gluten-free restaurant websites.

     An easy way to make gluten-free pizza is by buying already-prepared gluten-free pizza crusts which your child can top with his favorite toppings. Whole Foods Gluten Free Pizza Crusts come two to a package. They are thick, almost like a deep-dish crust, chewy, and tasty. You can also make your own pizza crust from pre-made mixes or by making your own mix from gluten-free pizza dough recipes. Bob’s Red Mill Gluten Free Pizza Crust Mix makes two 12-inch gluten-free pizza pie crusts. It tastes delicious, and you can even fold the crust over easily. If necessary, you can make the crust egg-free. Some pizza crust recipes, which you can find online or in gluten-free cookbooks, can be rolled out, just like traditional wheat dough, and can be made thin (new York style) or thick (Chicago style), versatility that your celiac child will enjoy. Then you and your child just need to load it with his favorite toppings and stick it in the oven.

Tips for Protecting Your Celiac Child from Hidden Sources of Gluten

     First of all, as you’re getting to know the guidelines of a gluten-free diet, read as many reference books and articles as possible and carry with you gluten-free resources at all times, particularly when you’re eating out, cooking, and grocery shopping. Knowledge is power when it comes to going gluten-free. A support group and dietician can also provide important information regarding sources of gluten your child should be cautious of. Make sure you are educating your child, meanwhile, about the information you learn. If he is a good reader, bookmark and show him the important parts of the materials you come across.

     Tell your family and friends, even certain colleagues, about your diet. It’s especially important to tell your family because there’s a strong genetic component to celiac disease, so if you child has celiac disease, your relatives are at a higher risk for it. It can be hard at times to follow a gluten-free, but it’s nearly impossible to do it in secret. Check the gluten-free status of items in your pantry, and learn how and where to shop for gluten-free food. Find out which stores near you publish lists of their gluten-free products. Take advantage of mail-order companies that will ship gluten-free food (even ready-to-eat meals) to your door.

     Get in the habit of calling manufacturers to verify that their products are in-fact gluten-free. You can usually find a toll-free number on the product’s package, or you can look it up online. Some manufacturers often change ingredients or switch suppliers, so it’s important to periodically check whether or not favorite products are still gluten-free.

     When you dine out, you’ll need to inform the waiter about your gluten-free diet, and learn what questions to ask regarding the preparation and serving of your food, and as your child gets older, teach him how to dine out gluten-free and practice with him at home by role-playing with you as the server or cook pretending to serve and prepare his meal.

     Learning to be vigilant about what you feed your child and teaching him this same attitude is part of the celiac lifestyle. It’s important that unless you’re one-hundred percent certain that a food contains no gluten even through contamination from other sources, don’t even allow your child to taste it. Teach your child this same habit of, “When in doubt, don’t.”

No Cook Orange-Iced Lemon-Shortbread cookies

Pamela’s Products NO COOK & SIMPLE COOKIES. No baking needed makes this a great gluten-free recipe to do with your kids.

Tina’s Orange-Iced Lemon-Shortbread Delights. Also try this gluten-free blueberry pie.

You will need:

Two Boxes of Pamela’s Lemon Shortbread Cookies (Frozen)

½ bag of Pamela’s Vanilla Frosting

1 large orange

Water

4TBL Butter

Directions:

Add  room temp. butter and water to half the bag of frosting

Mix well so no lumps.

Finely grate the orange rind to make orange zest (about 1-1/2-2 tsp. full)

Add to frosting and mix well and let sit about 15 minutes to “marinade”

Frost your cookies and set out for everyone to eat. (You may decorate them at this point too)

NOTE:  I prefer to lightly frost my cookies as the flavor of both the lemon and orange come though this way. They are delicious!

You may store in refrig. or freezer covered.

Irresistible GF Chocolate Frosting – Runner Up January 2010 Contest

Dear Tina, Thanks very much for offering this contest! My recipe entry is one your readers will never, ever forgive you for posting, because it’s just too good! I love Pamela’s Dark Chocolate Frosting Mix, but I wanted something even thicker and more sophisticated for a grown-up GF birthday cake.

 

 

January 2010 Contest Runner UP

Irresistible GF Chocolate Frosting

Time: 5 minutes

1/2 cup Pamela’s GF Chocolate Frosting mix
2 tablespoons Ghirardelli Unsweetened Cocoa powder
2 tablespoons butter
1 tablespoon water
1/2 teaspoon (real) GF vanilla

Combine frosting mix and unsweetened cocoa. Beat in butter, water, and vanilla. This recipe will frost an 8” flourless chocolate torte perfectly. Hope you and yours enjoy it!

Pork Picatta with Spinach and Garlic Mashes Potatoes

The below 3 recipes are all from Cheri the January 2010, Runner Up for the GlutenFreeHelp.info contest- making a delicious and nutritious gluten-free dinner. Using Pamela’s gf baking mix too!

 

 

 

January 2010 - runner up recipe

NOTE from Tina: you may substitute chicken for the pork in this recipe.

Pork Picatta
1/4 cup Pamela’s gluten free baking mix
3/4 tsp salt
3/4 tsp freshly ground black pepper
1 1/4 lbs pork tenderloin sliced 1/4″ thick medallions
2 Tbs olive oil
3 cloves garlic, minced
1 cup white wine
1 cup chicken broth
3 Tbs fresh lemon juice
1 recipe “Steamed” Spinach (recipe follows)
1 recipe Garlic Smashed Potatoes (recipe follows)
2 Tbs fresh chopped parsley

Combine Pamela’s flour, salt and pepper in a ziploc bag.  Place pork
medallions in the bag and shake until well-coated.
Heat 1 Tbs oil in a large skillet over medium heat.  Cook pork until it is
browned on both sides, about 2 min per side.  Transfer the meat to a
plate.
Add the garlic to the same skillet and then immediately add the wine and
cook over medium-high heat.  As the wine reduces, stir to dissolve the
small bits and juices remaining in the pan from the meat.  Cook until the
wine is reduced by about half.  About 4-5 minutes.
Add the chicken broth and lemon juice and cook until the mixture has
reduced slightly, an additional 3-4 minutes.  Return the medallions to the
skillet along with the remaining tablespoon of oil and heat until the
sauce thickens and the meat is cooked to medium donenesst, about 3 minutes.

Serve over the Express “Steamed” Spinach and Garlic Smashed Potatoes, then
top with parsley.
4 Yummy Servings

Express “Steamed” Spinach

1 bag pre-washed baby spinach leaves

Place the spinach in a large microwave-safe bowl and cover tightly.
Microwave on high for 90 seconds.


Garlic Smashed Potatoes

1 1/4 lbs Yukon Gold potatoes, left unpeeled and cut into 1″ pieces
4 large cloves of garlic peeled
1/2 cup chicken broth
1 Tbs olive oil
1/2 tsp salt

Place the potatoes and garlic in a large pot of boiling water.  Cover and
cook 15 minutes or until knife-tender.  Drain the water from the large pot
then add the oil, salt and broth and “smash” until desired consistency.

Misdiagnosing Has To Stop

Everyone knows I am an avid supporter of Celiac Disease Research and that I am very involved in a major project to gain government support for the only auto-immune disease which the government does not support. Why? Because the drug companies and pharmacies do not make money off of this disease because the simple solution is to abstain from the gluten in their diet.

Dr. Green has devoted his life to opening the eyes of Americans and intends to continue to raise awareness. Tina's Florida Cupcake Party – A Warm Thank you

Dear Tina,

Thank you so much for including us in your cupcake party Saturday!  It was really cute, when we got home from your place, Bodhi (my 4-yr old, who you met at Spring Valley School) was actually reading Danny the Dragon!  So Tristan picked up the book and got to the part where they are all eating dinner together, and he said, all matter-of-factly, “Danny the Dragon eats healthy.” I responded with, “yes, and his author, Tina Turbin, eats gluten-free!”, and just as matter-of-factly and straight-faced, he responded, ‘yes, true’. You could not have planned it better!

Then Sunday night I was telling Shane and Tristan that Monday was a holiday (their school started today, Tuesday), and that the four of us (Shane, Tristan, Bodhi and I) would have the day to play, so I asked them to think of some fun things to do on Monday.  Shane got all bright-eyed and exclaimed, “I know, we can write Tina Turbin a card thanking her for Saturday!”.  Oh Tina, just what every mom wants to hear, an un-prompted desire to write a thank you card!  And that’s what fun thing he wanted to do on our day off!  So I am enclosing that card – it looks like both boys drew you scenes of a Pokemon battle – quite an esteemed gift from their point of view!

It was wonderful to see you, and thank you again for including us.  I went to a dinner party Saturday night and must have told about 15-20 people about it, and gluten, and did the same today when I returned to work, so I am defnitely spreading the word.  Even Allen (my hubby) was telling people about it at his office yesterday, and he wasn’t even there!

My Gluten-Free Cupcake Parties Are Really Fun!

There is so much happening and such wonderful people reaching out to us to come to schools, events, hospitals and venues.  Thank you everyone!

I am heading to Los Angeles right after my very popular  Halloween Cupcake Party I am hosting with a terrific team of children and parent bakers. I only have 100% Gluten-Free Parties!

Pamela’s Products, is sponsoring this event in support of my efforts and my interest to help Dr. Peter Green at the Celiac Disease Center. This amazing man correctly diagnosed about 2500 celiac patients last year alone and the year before and the year before that…. Need I say more?
