This is a delicious alternative to dairy ice cream, and it truly doesn’t taste like coconut. Vary the fruits and have any darn flavored ice cream you would like. I sometimes alternate the fruits of choice, but this is an all-time favorite, for sure.
INGREDIENTS
1- 13.5 ounce can coconut milk
1- 10 ounce package frozen raspberries (or tasty fruit of your choice)
ΒΌ cup LIGHT agave nectar
1 tablespoon vanilla extract ( GF)
1/8- 1/4 teaspoon vanilla bean ( optional)
DIRECTIONS
1. Blend all ingredients in a good blender. Vita Mixer is preferred but not mandatory.
2. Pour all this into your ice cream maker.
3. Follow your ice cream maker directions. Serve alone or with a non-dairy whipped topping.
I find it’s best to eat it the eve of the day it’s made.

Wow I thought this was going to be a company review when I saw the title, but it’s a recipe! You mean I can make something as cool and delicious as this sounds? I’m a little hesitant, but I’m willing to give it a try. I have heard from other people how they make their own gluten-free, dairy-free ice cream and I always wanted to give it a try. With this recipe here I think the time has finally come!
I would have to say that coconut ice cream is my favorite type by far even more so that ice cream made from milk. It always bewilders and pleases me that it doesn’t even taste like coconut! I was expecting a pina colada type flavor the first time I tried coconut-based ice cream. Boy was I wrong!
There’s just something about raspberry I don’t know what it is but it’s my FAVORITE flavor ever! I don’t usually make stuff at home, but I’m going to try this because it just sounds so mouth wateringly delicious!
Ice cream made of coconut is the best, I have to say. If you do it right, that is, then you get this creamy consistency that doesn’t even taste like coconut. There’s this brand So Delicious that’s, well, so delicious! I can’t wait to try this brand of ice cream. I hope it comes out close to the So Delicious one!
We made this Friday night when my daughter had some girlfriends sleep over and it turned out wonderful! The girls devoured it though. I recommend doubling the measurements in this recipe if you have a big family! The best part of this recipe I think is that I didn’t feel guilty giving it to the girls. Sugar free?! Amazing!

My sister got me an icecream maker a couple of Christmases ago and I still haven’t used it!!! I feel so guilty but I just haven’t had the chance. But this recipe might just get me to take it out and give it a try. Then I don’t have to feel bad whenever my sister calls me! Plus I will have yummy ice cream at my disposal:)
I recently discovered that I’m allergic to coconut π Coconut ice cream was so good but I got very sick after eating it and I never realized why until I got some additional food allergy testing done.
Still, you’ve inspired me to make my own homemade ice cream. Can’t wait!
@Nori My sister has that model and it seems to work really well for her. I know there are more top-of-the-line ones out there, but this one is so well-priced that even if you didn’t like it or wanted to get another one down the road it wouldn’t be a big deal. Plus the color is really cute!
My three kids are home on school break for Thanksgiving and we made this ice cream last night and it turned out VERY well! My kids are all allergic to milk and soy and sensitive to gluten so as you can imagine this recipe was a godsend. It was also the first time we used our homemade ice cream maker.
