I am sure you all remember my raving review on Redwood Hill Farm. I couldn’t get enough of their products. Well, they are at it again. This time with a new line called Green Valley Organics. A completely lactose free line of dairy products. Even lactose free sour cream! I never knew lactose free products could taste so good. All of the Green Valley Organics products are certified organic, certified humane, lactose free and delicious. If you have ever tried any of Redwood Hill’s products then you know just how good they taste. Green Valley Organics is no different. Get your hands on some Green Valley Organics Lactose-Free plain kefir and try making this delicious summer treat:
LEMON KEFIR SHERBET
This recipe was adapted from Bon Appetit’s Lemon-Buttermilk Sorbet, June 2001. We replaced the buttermilk with an equal amount of Green Valley Organics Lactose-Free plain kefir for a bright refreshing treat. It can be made 3 days ahead. Keep frozen.
Yield: about 7 cups
- 1 1/4 c sugar
- 1/2 c fresh lemon juice (Use organic Meyer lemons if possible)
- 4 cups Green Valley Organics Lactose-Free plain kefir
Heat the lemon juice and sugar in a saucepan just until the sugar dissolves. Add kefir; stir. Chill in the refrigerator until very cold, about 4 hours. Pour into an ice cream maker and process according to manufacturer’s instructions. (we processed for 20 min.)
