Helen Sanders, owner of Little Bay Baking Company, has been living gluten-free since 1980 and spent 30 years recreating family recipes in the form of baking mixes that anyone can simply bake and enjoy.

My favorite perk is the versatility of each recipe. For example, the Little Bay Corn Bread and Muffin Mix enabled us to make true-to-taste hush puppies, coating for chicken tenders, Toaster Corn Pastries, Blueberry Banana Corn Muffins, and Corn Biscotti. I’m sure anyone creative in the kitchen can come up with many more recipes.
The company is considerate of consumers in using rice milk, soy milk, almond milk. The recipes have been well-tested before packaging the recipe directions, and the ones we tried were delicious.
The Little Bay Baking Waffle and Donut Hole Mix makes the most unique donut holes that to me tasted much like a funnel cake which I’ve always longed for and can’t have being celiac. I dusted them lightly with powdered sugar and satisfied that desire. Many testers agreed with me on this point.
Another favorite which came out most flavorful and left me wanting more was their recipe, Apple and Spice Bars, from their mix, Little Bay Baking Cookie Bar Mix. It was melt-in-your-mouth incredible. Just be sure to chop your apples very fine, as this was key. We all love this company’s many products and we found them very user-friendly.

I’d bake up a storm with all of these mixes and share with all of the kids in our neighborhood. That way, our son with Celiac wouldn’t be the one having only his treat, but would be sharing his delicious gluten-free treats with all the kids!!
I LOVE to try new gluten-free casein free mixes, they are sometimes hard to find. Looking forward to cornbread & chili and trying a pineapple upside down cake.

I was just diagnosed with Celiac, and am already dreaming of baked goods – I’ve found a local support group I’d love to share these with!
I’ve bought Little Bay Baking products before and couldn’t agree more with Mrs. Turbin. No matter in what configuration used the results are always delicious. I will use the Gluten-Free Corn Bread & Muffin Mix to make hush puppies for a southern dinner with the cat fish fillets we got from a nice neighbor. Or we might just batter the catfish in a crusty, corn batter. The Cookie Bar Mix makes for a great quick energy snack with the addition of nuts and raisins. And the yellow cake would become shortcake for strawberry shortcake- with real whipped cream. My mouth is getting watery just thinking about all those tasty treats.
These receipies look absolutely fabulous. I am always looking for goodies to replace those my 5 yr old daughter and I miss out on when attending family and for her, school functions. We also, have a wonderful, gluten free babysitter that we enjoy sharing all our goodies. The thought of gluten free corn muffins almost makes me wish for cold weather, for a big pot of bean soup and corn muffins, Yummy!
These mixes sound great. I’d like to say that if I won the giveaway I would practice some restraint, but I think I’d have to make them all in one day and just have a blast eating them with my daughter!
I am the only celiac in my whole family and they always look at me with pity faces that I am missing out. If I won the giveaway, I would love to make yummy treats to show them what I am lucky to eat!!
I would absolutely love to try your products. I have a gluten free support group and if I won the giveaway I would bring the delicious baked goods to our meeting for a fun night of sampling. My members love when I bring samples in. I would be very interested in trying some of these out . They all look wonderful and so easy to make. No more are the days when you have to put 20 ingredients together if you want gluten free baked goods. Our group of 35 will be so happy if I win.
The mixes sound amazing! I would plan a fun night with friends and family and give it a carnival theme! Make all those goodies that you cannot get gluten free at carnivals and fairs!! Have fun in the kitchen together making all the delicious treats and then have fun later playing together and enjoying our baking skills!!
I love corn muffins and I would first try to re-invent my broccoli cornbread recipe. My family is always looking for home-baked treats, so the cookie bar mix would be a hit with all of us! Thanks!
I would love to try these mixes. It would be such a treat. We don’t really get much gf mixes here and they’re very expensive because of shipping.
I would make hush puppies from the cornbread and dip them in warm chocolate fudge! Yes, I know it sounds strange. When my now husband was in graduate school in North Carolina, we went to a very nice seafood restaurant for dinner one evening. After we commented on how good the hush puppies were, the waiter suggested we try them with hot fudge. At first, we were both unsure but figured if the waiter suggested it we should at least try it. It was an experience that my husband still talks about almost 20 years later and also, saddly, something he has missed since going gluten-free. It would be nice to suprise him and bring back that special moment.
My son has an intolerance to Gluten but loves his sweets so I would sooo be baking him up some cakes, cupcakes, muffins and then maybe freeze a little for school lunches which is coming sooner than we all think. All your products look so good.
If I won I would start baking up some treats for my 3 boys. My oldest (6) just got diagnosed with ADHD and SPD. I am nervous and excited to step into a whole new world of foods for him. We all know how much food affects your body, but more so now for us. I don’t want my son to miss out on anything so this is a family deal. GF here we come!!!!
If I was to win the give away product I would start by inviting all the people that I know that have a gluten allergy over to my house for a eating party. All we would do is eat samples of the mixes and then share our ideas and thoughts about caring the product in the closest store possible. I love to cook and I know that the people I have talked to with the allergy are always looking for new and improved mixes for their families to try. I know that the kids in my house love it when I make new things because then they get to try it also even though they don’t have the allergy like I do.
I would enjoy not making something from scratch for a change!! Cooking GF-CF, peanut and egg free takes time and it would be nice to make something for my son in a timely manner for a change!!
I would fix the cakes and cookies for my boys, as they think all my gf stuff is not very good. I think the gf would benefit them as well with their medical needs, but they are reluctant, as some of the stuff does not taste good. These products look amazing, and I think that they would change their minds, so it would be a nice surprise for them to eat a treat and then find out that it is gf. Then I would make me the cornbread, as that is one of my favorites, and I miss it terribly.
There are so many things I would do with my gluten free goodies! My 7 year old son was recently diagnosed with Celiac Disease. Being an avid cook and baker, I was really worried I couldn’t keep up my cooking/baking passion without my gluten staples. After discovering websites like yours, I have found I can still create exciting meals and invent unique recipes gluten free! Mostly, I want to be able to change my son’s school lunch menu. I want to be able to bring in exciting ideas and recipes that are kid friendly foods. I am also a teacher at my son’s school and see first hand what gluten can do to kids with ADD/ADHD, autism and Ausberger’s. I would love nothing more than to find a lunch menu that would accommodate these kids (as well my my own!)
I am fairly new to gluten free cooking, having just recently discovered my allergy. I dream of being able to create baked goods that make friends and family say, “Wow. This is gluten free? Amazing.” Instead of having “my food” and “their food”.

I dream of making the cookie bars first….I can’t even IMAGINE having cookie bars again!!! They are something I thought I’d never have again! Then, I’d make the yellow cake, with chocolate frosting of course. That is my favorite cake and one I haven’t been able to find a good version of in four years, since I was diagnosed with Celiac Disease! The cornbread mix would be saved for last. I would love to make a DELICIOUS corn casserole with part and then muffins with the rest! Oh oh, or maybe corn fritters!! If I win this giveaway, so many of my DREAMS would come TRUE!

I was diagnosed with Celiac’s Disease four years ago and in the past few months I have seem to come into my own and accepting my gluten free lifestyle. With this I have started a blog in which I talk about my experiences with trying new foods, challenges I face, and all the fun things that go along with being Gluten Free.
As anyone who has tried making Gluten Free baked goods from scratch or even prepackaged boxes knows that it is a try as you go situation. I still have my fair share of ups and downs when it comes to baking gluten free breads or desserts that never come out quite as I had hoped. Overall this giveaway seems like a great opportunity to try new products that have great reviews. To try mixes with confidence that they not only taste good but are good for you. Most of all breakfast is the hardest meal for me. I am most excited to try Waffles again!

If I were to win, I would have a party! I’d invite my friends–and suprise them with how tasty the food is–and how GOOD they’ll feel after eating it! Hooray for wonderful, easy, healthy food!
I’d make them all right away, then freeze half (maybe) and leave the rest in an attempt to keep my gluten free teenager full!
My daughter is getting married in November. The shower is next month. If I won I would make a cake for the shower for me and my mom. I have been looking for a good mix for as long as I have had celiac (23 years). If it turned out good I would make one for the wedding.

I would bake up treats for my daughters volleyball team when practices start!! Everyone takes turns supplying things, and it would be so nice to educate everyone about great GF foods!!
If I won these mixes, I would be anxious to see the faces of my two children who follow a gluten-free diet. It makes me so happy when I can make them something that is gluten-free and that tastes as good as the “normal” product. They don’t get items such as these very often so it is a nice “treat” for them that they are very grateful to have! I think having Celiac disease gives food a whole new meaning.
The Yellow Cake Mix has great packaging – foil bag with plastic bag inside.
I changed the recipe by using milk instead of rice milk. The cake was fun and easy to make. I noticed after mixing and the mix sat for a minute that the batter was forming lots of bubbles. The raw batter tasted delicious. This cake when done had a great texture, it was lighter than other gluten-free cakes. Great flavor. 5 stars.
I also made one pan as a pineapple upside down cake. I thought it was thoroughly cooked when the other pan was done but it really needed more time. The cake part that was baked thoroughly was delicious.
I’ve worked for Quality Assurance for the food industry for many years! – texture good, not overly dense, A+, a little floury taste so not sure what that is.
The donut holes are a very good product. I love them. The cookie bars are good and moist. I like those too.
The Yellow Cake Mix melts in the mouth, buttery texture, moist, not to strong on the vanilla.
I would love to try making the hushpuppies to go with a low country boil. I haven’t been able to find a gluten free mix and am excited to know there is one out there. The cookie bars would be wonderful to have for dessert and I would have some ice cream with them. I have a well tested cornbread recipe that I use but it would be nice to have a mix to make the work a little easier. A good gluten free cake mix is hard to come by so it’s nice to know there’s one out there that tastes good. Would make a cake for myself to enjoy on my son’s birthday.
These products look wonderful. I run a support group in Mansfield, Ohio, and I would be sharing these items with about 40 more people, so that they, too, can find out just how wonderful GF products are.
I am so excited about the possibility of winning these products! I have just learned that I am Gluten-sensitive and they are running tests for Celiacs Disease. My Registered Dietician wants me to eat Gluten Free and I am very overwhelmed about where to start. I also have Type 2 Diabetes and have worked hard to try to control it. Now, I have to work twice as hard to eat Gluten Free also. I appreciate the chance to try your line of products. I would say the Donut Holes taste like the Cinnamon sticks at the Festivals. The texture is light and fluffy.

Before I was GF, I had never even heard of corn biscotti, and now it’s just to-die-for! Not so sweet as chocolate and gives me that Southern satsifaction. Unique and easy!
What I really appreciate about Little Bay is that they fit the creative chef in the home kitchen perfectly. I have been able to make extraordinary hush puppies and muffins doing my own thing with each of them. There are so many options available if you’re willing to “think outside the box.”
