INGREDIENTS
3 egg whites
¼ cream of tartar
¾ c superfine sugar
¼ tsp vanilla
DIRECTIONS
1. Preheat oven to 200 degrees.
2. Beat 3 egg whites with 1/4 tsp cream of tartar until soft peaks form.
3. Add ¾ c superfine sugar and ¼ tsp vanilla until stiff peaks form.
4. Dollop onto a baking sheet covered with parchment paper and bake at 200 degrees for 1 hour and 45 minutes, or until dry.
5. Let cool. Add some cocoa powder, powdered espresso, or other flavoring with the vanilla, if you desire.

I used to be sooo addicted to these before I went gluten-free and totally forgot about them. I’m so excited to try this recipe!
I’ve heard that another name for meringue cookies is “Forgotten Cookies” because you can leave them in a gas oven for a long period after you’re done cooking them. Of course, I’ve never actually heard them called that before, but I still thought this was an interesting meringue fact to pass on!
Oh boy, love love love meringue, not just the cookies. There are several types of meringue…French (of course, the most well-known), Italian, and Swiss even (delish!), which are all good. If anyone has some great gluten free meringue dessert recipes please post!
What I really love about these cookies is that you can get them in different colors and they can serve almost as decorations–edible decorations of course, which are the best decorations you can have;) I recently put on a baby shower as well as a bridal shower and filled glass bowls with different-colored meringue cookies and everyone raved about them. They didn’t even want to eat them because they were too pretty!
I was really anxious about making these but I was happy to find that they came out great! Not as pretty as storebought ones, but at least they tasted good! I love meringue cookies as the perfect guilt-free afternoon treat and also they go so well with afternoon tea.
Funny, but I wasn’t much for meringue cookies until last Christmas. They always seemed…stale…I guess that’s the word. Then I let them sit in my mouth for a little while and experienced that amazing meringue-cookie-melt-in-your-mouth phenomenon, and then I was hooked!
So happy to have this recipe now in my gluten free recipe arsenal. I haven’t made them yet, but I was at the grocery store today when I walked by a box of chocolate meringue cookies and instead of wistful I was like, “Ooooh I can make these at home!” I’ve been meaning to make them but there just hasn’t been any time.
