The masala, a mixture of spices used in Indian cuisine, has a delightful and creamy flavor. Ghee is a form of butter that comes from Ancient India and is a delicious addition to the mix.

This meal is so simple to make! Only using a head of cauliflower, a jar of Masala Cooking Sauce, Ghee and a few herbs, you can cook up a divine dinner in minutes and have the fragrance of spices wafting out the door making you want more!

Roasted Gluten Free Masala Cauliflower

This simple and delicious vegetable dish is healthy and gluten-free and includes cauliflower, a nutritional powerhouse full of antioxidants and its mild flavor is a perfect blend for the spices.

Ingredients

  • 1 whole head of cauliflower, leaves removed and de-stemmed.
  • 1 jar Masala Cooking Sauce
  • 2 tablespoons Ghee melted
  • 3 garlic bulbs, finely crushed
  • OPTIONAL: small handful of fresh parsley leaves

Instructions

  1. Preheat the oven to 350F degrees.
  2. Place the entire cauliflower in a large piece of tin foil or use two pieces folded together to make one large one.
  3. Place in a glass baking dish. 
  4. Mix your melted ghee, garlic and Masala together in a bowl until well incorporated.
  5. Pour this over your cauliflower and use your hands to ensure it gets all over.
  6. Cover with foil and seal the cauliflower so it “steams” in the foil in the oven.
  7. Place on center rack of oven and bake for 30 minutes,
  8. Remove from oven and open the foil gently.
  9. Use a large spoon to cover the cauliflower with the sauce.
  10. Seal back up and place back in oven for another 30 minutes.
  11. Remove from oven and peel back foil. 
  12. Turn the temperature up to 400F degrees.
  13. Place back in oven unpeeled for 15 minutes.
  14. Remove from oven and place on a serving platter.
  15. Enjoy!
