Are you looking for new and fun recipes to add to your celiac or gluten-sensitive menu? Well, this chipotle chicken salad in a gluten-free wrap might become your new favorite dish! This dish has become a hit in my family, being that it is incredibly versatile and really simple to make. There are so many possibilities of fillings/toppings for the wrap, and this one is my version of a healthy chicken salad.
I used roasted chicken breast, tossed with some hemp and sesame seeds, ground chipotle, a little Primal Nutrition’s olive oil to coat, and finished with a “small” squeeze of lemon juice. I also added some Primal Nutrition mayonnaise, Primal Nutrition spicy mustard, homegrown cherry tomatoes, fresh spinach, red onions, and some long green onions. I topped it all off with just a dash of Redmond Real Sea Salt. I like to serve this dish open-faced, allowing each guest to wrap their own at the table.
As mentioned earlier, I love this recipe because of its versatility. You can cater to each person’s individual preferences so they can enjoy whatever fillings/toppings they want to add in. If you aren’t a wrap person, you can just add all the ingredients of your choice into a bowl and keep it as a salad. It truly can adapt to your appetite.
